- Preheat the oven to 210 °C
- Separate the whites from the yolks
- In a bowl, mix the yolks with the sugar
- Gradually add the flour, vanilla sugar and baking powder
- Beat the egg whites until stiff, then add them to the previous mixture
- Line the baking sheet with well buttered baking paper, and then pour the dough over it
- Spread out evenly to have a nice rectangle of the same thickness everywhere
- Bake for 10 minutes of cooking
- Once baking is complete, immediately roll the cookie with the parchment paper (and a tea towel so as not to burn yourself)
- Leave to cool for a good hour, then unroll
- Spread the jelly all over the dough, and roll it again
- Sprinkle with icing sugar
- Cut the ends at an angle to make it pretty and not to have the dry parts
