Steps

  1. Use a 12 mm fluted socket to make 10cm lines (or 3cm diameter balls)
  2. Mix the melted dark chocolate (or other) with the pastry cream to flavor it
  3. Use pastry cream to generously fill the éclairs (or cabbage)
  4. Lightly melt the fondant in a saucepan
  5. Incorporate (by mixing) the cocoa powder in the fondant
  6. Use an icing socket to glaze the top of the éclairs (or cabbage)

Warning

  1. To finish the movement well, we stop pressing, we go down and we go up suddenly towards the dough!
