- Wash the tomatoes
- Grind the tomatoes (to peel them better)
- Boil water, immerse them in 30 seconds, then in a bowl of very cold water for 30 seconds (for the thermal shock to act)
- Peel the tomatoes
- Cut the tomatoes into quarters and squeeze them a little to remove excess water and juice.
- Cut into small coarse pieces
- Peel and chop (or squeeze) the garlic
- Pour the tomatoes, garlic and a drizzle of oil in a saucepan and bring to a boil over high heat, then lower the heat.
- Simmer for about 15 minutes, stirring (if the sauce reduces too much during cooking, do not hesitate to add water)
- Add salt, pepper and basil and mix
- Serve
